Avocado Chocolate Mousse

Avocado Chocolate Mousse

Serves 2 generously

  • 2 avocados
  • 2 tablespoons of maple syrup
  • 2 tablespoons of raw cacao powder / cocoa power
  • 1/4 cup of unsweetened almond milk
  • 1 frozen banana ( you can freeze bananas which are amazing added to smoothies, just remember to peel them first and store them in an air tight container for no longer than a month )image
  1.  Remove the flesh from the avocados and add all the ingredients into your blender
  2. Blend up until smooth; you may want to add more milk to suit the consistency that you like
  3. Serve chilled from the fridge and topped with strawberries

Blueberry Yoghurt Delight

Serves 4image

  • 2 Cups of Natural Yoghurt
  • 1 cup of unsweetened coconut milk yoghurt
  • 1 lemon juiced
  • 1 1/2 cup of blueberries ( fresh or frozen )
  • 2 tbsp of raw honey
  • Chocolate Granola to serve
  1. Combine the blueberries, honey and lemon in a saucepan and simmer on a low setting until the blueberries are soft
  2. Puree the mixture together in a blender until smooth
  3. Combine the blueberry puree together with the yoghurts in a bowl and place in the fridge
  4. Meanwhile  make the chocolate granola
  • 1 Cup of rolled oats
  • 1/2 cup of coconut flakes
  • 2 tbsp of raw cacao powder
  • 2 tbsp of raw honey
  • 1 tbsp of coconut oil

Set the oven to 180°C or 160°C for fan assisted oven

  1. Melt the coconut oil, honey and cacao powder together in a pan
  2. Place the oats and coconut flakes in a bowl
  3. Add the honey mixture to the oats and combine thoroughly together
  4. Spread the mixture out on a baking sheet
  5. Bake in the oven for 15 minutes until crisp

Wait for the granola mixture to cool before placing a generous amount of into ramekin dishes, cover with the blueberry yoghurt and serve chilled.
