Avocado and Scrambled Egg on Toast
- 1 or 2 slices of wholemeal bread
- Half an avocado
- Freshly squeezed lemon juice
- 1 egg,
- Toast the slices of bread
- Halve the avocado and remove stone, scoop out the flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.
- Spread the mashed avocado on top of the toast and top with scrambled egg.
