Avocado and Scrambled Egg on Toast


  • 1 or 2 slices of wholemeal bread
  • Half an avocado
  • Freshly squeezed lemon juice
  • 1 egg, 
  • Seasoning
  1. Toast the slices of bread
  2. Halve the avocado and remove stone, scoop out the flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.
  3. Spread the mashed avocado on top of the toast and top with scrambled egg.
